4 cups broccoli, cut into bite size pieces
1 onion, chopped
2 garlic cloves, minced
1 bell pepper, chopped into strips
4 tablespoon Teriyaki
1 tablespoon sesame oil
1 8oz can of pineapple tidbits with juice
juice from one lime
1/2 teaspoon ground coriander
1/2 teaspoon ground ginger (if you have fresh ginger use that grated fine)
4 cups of shrimp, peeled deviened
1/2 box of orzo
yea its alot of green but thats ok...its all good...:)
In a large saute pan, cover bottom with olive oil and add broccoli, onion, celery, bell pepper all the liquid ingredients, including juice from pineapple and spices, stir well....saute until almost tender, add shrimp turn on low and stir...cover until shrimp is cooked through, (pink color if using raw) this takes only a few minutes,
in the meantime pour 2 quarts water into a saucepan, salt water and bring to a boil....add orzo and cook until "al dente" about 8 to 10 minutes...from the sauce pan take the orzo out using a slotted spoon and add to veggie and shrimp mixture stirring......once coated, turn heat off and cover for 5 minutes
....serve hot...sprinkle some sesame seeds on top with chopped fresh parsley and you have a yummy healthy meal........ENJOY
