Cucumber Dill Vinaigrette

1 baby cucumber (or 1/2 of regular cucumber chopped roughly)
2 cloves garlic chopped
1/2 zest from a lemon
1 juice from a whole lemon
1/4 cup of fresh Dill
1 tablespoon Dijon mustard
1/4 cup of white wine vinegar
1/4 cup of fresh grated Parmesan cheese
olive oil
salt and pepper



put all ingredients except the olive oil and Parmesan in a food processor. turn on high and mix ......add olive oil slowly into the mixture as its mixing.........you may end up with around 1/2 cup of olive oil in the cucumber mixture...once all is incorporated and pureed......grate 1/4 cup of Parmesan cheese into mixture turn on for a second to incorporate




 ........use this vinaigrette on your favorite salad
