Crock Pot Indian Stew

My Husband bought a bag of Goat cubes, honestly that looked and sounded awful and I thought what am I suppose to do with this? So the creative person that I am, haha, I decided we were going to have it Indian style. I love Indian food, there is just something about all that flavor that makes it really Yummy. As I was preparing this, I realized you could do this with any meat of choice. Chicken will be my next venture, using this same recipe...I hope you like this, it truly was good. OK the sauce was really good, I just couldn't taste the goat. but I had several people who ate all of it and said it was awesome........

1b of Beef, Chicken, Lamb or Goat (your choice)
2 tsp ground coriander
1 tsp ground cumin
1/4 tsp turmeric
1/4 tsp cayenne
1/2 tsp ground ginger
1/2 tsp ground yellow mustard
1/2 tsp cinnamon
1 Tablespoon Curry Powder
1 13 oz can of coconut milk
1 28 oz can of diced tomatoes
1 onion diced
3 cloves of garlic minced

Cut meat into cubes. In a large skillet, coat bottom with olive oil and turn on med. When pan is hot, not smoking, but hot place meat in pan and sear on all sides....meanwhile in a mixing bowl add all the spices, coconut milk and garlic and mix well. Pour into crock pot. Add onions, can of tomatoes and stir...Add the meat to the mixture in crock pot and mix again making sure the meat is totally submerged and coated from the spice mixture....Set crock pot on 6 hours.....Serve over rice...

This is the end result, My husband fixed his plate and as you can see he is a little messy...enjoy !!!!
