Stuffed Pork Tenderloin with cheese's and spinach

I love pinterest, I do believe I've mentioned that throughout my blog haha...I have over 4000 pins and 32 boards (obsessed you say.......NEVER), I have used alot of my pins to help me decorate my home, so I don't pin in vain...haha..I decided I wanted to start making some of the recipes I have pinned, good grief I have so many recipes pinned I could cook for two years and never make the same thing. So this recipe is from pinterest and its from the website of www.janalaurene.com,  I never take a recipe and don't give do credit.  This recipe looked amazing, she is a photographer so of course the final product was picture perfect .....Oh if only I could take pics like that...oh well your stuck with my pics SORRY...ok so here is the recipe and I hope you enjoy it......

Stuffed Pork Tenderloin
1  3lb pork tenderloin
2 cloves garlic
10 oz fresh spinach
3 oz sun-dried tomatoes
4 oz goat cheese
4 oz creme cheese
1/2 cup greek Yogurt or sour creme


saute garlic and spinach in a little olive oil



...when spinach is almost done
ok now my pan is way to big......hmmm


 add garlic and sundried tomatoes and saute a little longer



......remove from pan and let cool.  In another bowl add all the cheeses and mix well, add spinach mixture stir well until all is incorporated




...Cut down the center of the tenderloin, but do not go all the way through, spread apart to make the meat flat, spread the cheese mixture over tenderloin.
 3 lb tenderloin
cut to lay flat
mixture spread over meat...you could be neater than I but it will taste the same ha




roll up in a jelly roll and tie with cotton string.....




bake at 400 degrees until internal temp is 155. (use a meat themomater) remove from oven let stand for 5 minutes and serve.
