Bratwurst Stuffed Peppers

6 Green Bell Peppers
2 Onions Chopped
2 lbs Brats sausage (remove casing if using the links)
1 yellow bell pepper chopped
1 red bell pepper chopped
1 garlic clove minced
2 cups beef broth
1 cup long grain rice


cut the tops off of Bell Peppers, remove all seeds and vein.


 Bring a large pot of salted water to a boil and add Peppers. Boil till tender, about 7 minutes...drain and put in a baking pan, let cool.


brown sausage and saute the chopped peppers, onion and garlic with the sausage until tender and sausage is no longer pink.  Add beef broth and rice stir,  cover and turn heat down to med low, allow rice to soak up broth.  10 to 15 minutes



Stuff each pepper with mixture and place cheese on top of each.  bake in oven 15 to 20 minutes till cheese has melted
